What is Dhaba Style Egg Curry?
A Dhaba Style Egg Curry is a rustic, flavorful dish inspired by the roadside eateries (dhabas) found along highways in India. These dhabas are known for serving hearty, homestyle meals with bold flavors, perfect for travelers. Dhaba Style Egg Curry typically features boiled eggs simmered in a spicy, aromatic gravy made with onions, tomatoes, and a blend of traditional Indian spices. The curry is rich, with a smoky flavor often achieved by cooking over an open flame or using generous amounts of oil and spices.
Key Components of a Masala Egg Curry:
1. Boiled Eggs:
- The star of the dish, eggs are boiled to a medium or hard consistency, then fried until they develop a golden crust. This adds texture and helps the eggs absorb the rich flavors of the curry.
2. Onions:
- Finely chopped onions are cooked until they turn soft and golden brown. This forms the base of the curry, giving it a sweet and savory depth.
3. Tomatoes:
- Fresh tomatoes are chopped and cooked down until they break apart and become part of the gravy. They add a tangy, slightly sweet flavor that balances the spices.
4. Whole Spices:
- Spices like cumin seeds, bay leaves, cardamom, and cloves are tempered in hot oil to release their aromas. This step is crucial for infusing the oil with flavor, which then permeates the entire dish.
5. Ground Spices:
- A blend of ground spices like turmeric, red chili powder, coriander powder, and garam masala are added to create the signature “masala” flavor. These spices give the curry its rich color and complex taste.

Jammy Egg Curry: A Comforting Spice-Filled Delight
There’s something magical about a dish that’s both comforting and bursting with flavor. And if you love eggs as much as I do, this Jammy Egg Curry is about to become your new favorite. With tender, jammy eggs swimming in a fragrant, spiced gravy, it’s the kind of meal that hits all the right spots.
Step One: The Perfect Jammy Eggs
First things first, let’s talk about the eggs. To get that perfect jammy yolk, we’ll medium boil them. Drop your eggs into a pot of boiling water and let them cook for exactly 7 minutes. This timing is key to achieving that just-right texture—not too runny, not too firm, but that lovely, gooey center that’s irresistible. Once done, plunge them into cold water to stop the cooking process. Peel them once they’re cool enough to handle, and set those beauties aside.
Prepping the Aromatics
While your eggs are taking a refreshing cold bath, it’s time to get your chopping game on. Finely dice one large red onion, four roma tomatoes, and five green chillies. These ingredients are the flavor base of our curry, bringing sweetness, tang, and a touch of heat. Don’t rush this step—perfectly chopped vegetables make for a smoother, more cohesive dish.

Frying the Eggs: A Flavor Boost
Now, heat up a tablespoon of neutral oil in a pan. Gently fry the boiled eggs for 2-3 minutes until they develop a slight golden crust. This step is optional, but trust me, it adds a delightful texture. For those who love a bit of extra zing, toss in a teaspoon of red chilli powder, a teaspoon of turmeric, and a pinch of salt while frying. The eggs will soak up these spices, giving them an extra layer of flavor that’s simply divine.

Building the Curry Base
With the eggs set aside, it’s time to build that aromatic curry base. In the same pan, add two tablespoons of neutral oil. Once hot, toss in your whole spices—cumin seeds, cardamom pods, bay leaves—whatever you have on hand. Let them sizzle and become fragrant, which should take about a minute. Then, add the chopped onions and cook them on medium-low heat until they turn soft and golden, about 8-10 minutes.
Tomatoes, Chillies, and Spice
Next, stir in the chopped tomatoes, green chillies, and a generous amount of minced garlic and ginger. Let everything cook together on medium heat for another 4-5 minutes until the tomatoes start to break down. This is where the magic happens—the ingredients meld together, creating a rich, flavorful base. Add in the dry spices—coriander, cumin, turmeric, and red chili powder—along with two cups of water. Bring it all to a simmer and let it cook for 15-20 minutes, allowing the spices to bloom and intensify.

Bringing it All Together
Finally, stir in a handful of chopped cilantro for freshness and slide those jammy eggs back into the pan. Let them soak up all that flavorful curry, and you’re ready to serve. This Jammy Egg Curry is best enjoyed with warm naan or a steaming bowl of rice, making it a perfect meal for any day of the week.

Egg Masala Curry (Anda Curry – Dhaba Style)

6-7 eggs
1 large red onion
4 roma tomatoes
5 cloves garlic
1 tbsp ginger
5 green chillies
2 cups water
4 tbsp neutral oil
- Whole Spices
1 stick cinnamon
1 bay leaf
2 green cardamom pods
1 black cardamom pods
- Spices
2 tbsp kashmiri red chilli powder (or any other red chilli powder)
2 tsp cumin
2 tsp coriander powder
2 tbsp garam masala
salt to taste (~2 tsp)
1 tsp black pepper
Directions
- Start by medium boiling the eggs in boiling water for 7 minutes (this will leave the yolk jammy).
- While thats happening, finely chop 1 large red onion, 4 roma tomatoes and 5 green chillies.
- Once the eggs are boiled add them into cold water to stop the cooking process, then peel and set aside.
- In a pan heat up 1 tbsp neutral oil and add in the eggs and fry for 2-3 minutes then set it aside.
- (Optionally you can add 1 tsp red chilli powder, 1 tsp turmeric and a pinch of salt for extra flavor. The spices get directly added into the pan with the eggs while frying, toss them around until fully coated.)
- In the same pan add 2 tbsp of neutral oil and heat up before adding in the whole spices listed above.
- Let the spices get aromatic (~1 minute) then go in with the onions and cook until soft (8-10 minutes) on medium low heat.
- Once the onions are soft, add in chopped tomatoes, chopped green chillies and minced garlic/ginger.
- Let that cook for another 4-5 minutes on medium heat.
- Add in the spices listed above, 2 cups of water and bring to a simmer, let that go for 15-20 minutes, this will allow the spices to build and become really flavorful.
- Add in a handful of chopped cilantro and the boiled eggs.
- Now ITS TIME TO ENJOY!!
