It is fast, bold, and usually served over hot jasmine rice with a crispy fried egg on top.

Ingredients

  • Ground chicken or pork, 450 g

  • Neutral oil, 2.0 tbsp

  • Garlic, 6 cloves, finely chopped

  • Green chilies or Thai chilies, 2 to 4, finely chopped (to taste)

  • Thai Basil, 1 packed cup (substitute with Regular basil, 1 packed cup if Thai Basil not available)

  • Sauce
  • Soy sauce, 1.0 tbsp

  • Oyster sauce, 1.0 tbsp

  • Fish sauce, 1.0 tbsp

  • Sugar, 1.0 tsp

  • Dark soy sauce, 0.5 tsp (optional, for color)

  • To Serve
  • Steamed jasmine rice

  • Fried Egg

Directions

  • Heat a wok or large pan on high heat. Add oil and let it get hot.
  • Add chopped garlic and chilies. Stir for 10 to 15 seconds until fragrant. Do not brown.
  • Add ground meat and spread it out. Let it cook undisturbed for 1 to 2 minutes so it browns.
  • Break up the meat and stir fry until fully cooked and slightly crispy in spots.
  • Add soy sauce, oyster sauce, fish sauce, sugar, and dark soy sauce if using. Stir and cook for 1 to 2 minutes until glossy.
  • Turn off the heat. Add thai basil (or regular basil). Toss just until wilted.
  • Serve immediately over hot rice. Top with a crispy fried egg if you want the full experience.
