What is Butter Chicken?
Butter Chicken, known as “Murgh Makhani” in Hindi, is a beloved Indian dish that originated in the 1940s in Delhi. It is characterized by its rich, creamy, and mildly spiced tomato-based sauce, which perfectly complements tender pieces of marinated chicken. This dish has become one of the most popular Indian recipes worldwide, celebrated for its smooth texture and comforting flavors.
Key Components of Butter Chicken:
- Chicken: The dish typically uses boneless chicken, which is marinated in a mixture of yogurt and spices such as turmeric, cumin, coriander, and garam masala. The marination process infuses the chicken with deep flavors and tenderizes the meat.
- Tomato-Based Sauce: The sauce is made from a base of pureed tomatoes, which gives it a slightly tangy flavor. The tomatoes are cooked down with a blend of spices, including garlic, ginger, and sometimes green chilies, creating a rich and aromatic sauce.
- Butter and Cream: True to its name, Butter Chicken is finished with generous amounts of butter and cream, which give the sauce its signature smooth and creamy texture. This richness is balanced by the acidity of the tomatoes and the warmth of the spices.
- Spices: While the dish is mildly spiced compared to other Indian curries, it still includes a flavorful mix of spices. Common spices used in Butter Chicken include garam masala, cumin, coriander, and sometimes a touch of fenugreek for a slightly bitter note.
Serving:
Butter Chicken is usually served with naan (Indian flatbread), roti, or steamed basmati rice. The rich, creamy sauce makes it perfect for soaking up with bread or mixing with rice, making each bite incredibly satisfying.

If youโre craving a hearty, flavorful meal thatโs simple to make yet impressive to serve, this Butter Chicken is just what you need. Combining tender, spiced chicken with a rich, creamy curry base, this dish is a true celebration of bold flavors and comforting textures. Hereโs how to bring this delicious dish to life in your own kitchen.

Preparing the Chicken: A Flavorful Marination
Start by chopping chicken breast into bite-sized cubes. This step ensures the chicken cooks evenly and absorbs the marinade’s flavors. Speaking of marinade, itโs time to coat the chicken in a blend of spices. While the exact spices are up to your taste, a typical mix might include cumin, coriander, turmeric, and chili powder. If you can, let the chicken marinate for about an hour. This allows the spices to penetrate the meat, resulting in deeply flavored, juicy chicken. If youโre short on time, even a quick marination will enhance the flavor.
Air Frying the Chicken: Crisp and Tender
After marinating, the chicken is ready for the air fryer. Air frying is a fantastic way to cook the chicken because it gives you a slightly crisp exterior while keeping the inside tender and juicy. Set your air fryer to 380ยฐF and cook the chicken for about 12 minutes. This method is not only quick but also healthier, as it requires less oil than traditional frying.

Building the Butter Chicken Base: Aromatics and Spice
While the chicken is cooking, itโs time to work on the curry base. Start by roughly chopping a red onion and a couple of ripe tomatoes. Heat 2 tablespoons of oil in a pan, then add minced garlic and the chopped onions. Sautรฉ these until the onions turn golden and fragrant. Next, add the chopped tomatoes and cook them until they soften. To speed up this process, add a bit of water and cover the pan for about 4-5 minutes. This helps the tomatoes break down, creating a rich base for your curry.
Blending the Sauce: A Smooth, Flavorful Foundation
Once the tomatoes are soft, itโs time to add your choice of spices to the mixture. These could include garam masala, cumin, or any other favorite spice blend. Let the spices bloom in the pan, releasing their flavors. Then, blend the mixture until smooth. This step ensures a velvety texture for your curry, making it perfect for soaking up with naan or rice.

Bringing It All Together: Creamy, Spiced Perfection
Return the blended curry sauce to the pan and stir in a bit of sugar, dried fenugreek leaves, and cream. These additions bring a touch of sweetness, a subtle bitterness, and a luxurious richness to the sauce. Let the sauce simmer for a few minutes, allowing the flavors to meld together.
Adding the Chicken: The Final Touch
Finally, add the air-fried chicken to the curry base and give it a good mix. Let the chicken simmer in the sauce for a couple of minutes, so it can soak up all the rich flavors. Now your dish is ready to be served! Whether you pair it with warm naan, fluffy rice, or enjoy it on its own, this Easy Butter Chicken is a dish thatโs sure to satisfy and impress. Enjoy every bite!
