What is an egg bhurji?
Egg Bhurji is a popular Indian-style scrambled eggs dish, made by cooking eggs with a blend of spices, onions, tomatoes, and sometimes other vegetables. Itโs a quick, flavorful dish thatโs commonly enjoyed for breakfast but can be eaten any time of the day. The dish is known for its bold, spicy flavors, and it’s often served with bread, roti, or pav.
Growing up in India this was readily available and its very nostalgic for me. Wanted to share this recipe because it is guaranteed to leave you wanting more! Eggs can get boring but this will definitely spice it up!

Egg Bhurji: Spicy Scrambled Eggs with a Kick
Who doesnโt love a plate of scrambled eggs? Theyโre easy to make, comforting, and packed with protein. But if youโre tired of the same old scrambled eggs and looking for something to spice up your breakfast, lunch, or even dinner, this recipe is for you! Letโs dive into these deliciously spiced scrambled eggs that will wake up your taste buds with every bite. Plus, it’s super simple and quickโperfect for busy days or lazy weekends!
Prep Your Veggies
First things first, letโs get our veggies ready! Dice up one large red onion, four juicy tomatoes, and about 4-5 green chillies. Keep in mind, the finer you dice those green chillies, the more heat theyโll bring to the dish. So, if youโre sensitive to spice, you can always reduce the number of chillies or keep them a bit chunkier. Once thatโs done, mince some fresh garlic and ginger. These aromatics will add a beautiful base flavor to your eggs.

Sizzle in the Pan
Now that everythingโs prepped, grab a pan and heat up three tablespoons of oil on medium heat. Once the oil is hot, toss in your diced onions and let them cook for a couple of minutes. You want them to get soft but not browned. This step builds the savory foundation of your dish, giving those eggs a rich, slightly sweet oniony goodness.

Add in the Flavor Bombs

Add salt to taste, about 1 teaspoon of black pepper, ยฝ teaspoon of turmeric, 1 teaspoon of chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, and 2 teaspoons of garam masala. These spices will add warmth, depth, and a bit of heat to your scrambled eggs. Mix it all up and let the flavors blend for another minute or so.

Scramble it Up
Now for the fun partโcracking in the eggs! Crack three eggs directly into the pan, right on top of that flavorful mixture. Scramble them up, mixing everything together. You can cook them to your desired consistencyโwhether you like your scrambled eggs soft and creamy or a bit more firm. Just keep stirring and cooking until the eggs are done to your liking.

Egg Bhurji aka Masala Scarmbled Eggs

minutesIngredients
6 eggs
1 large red onion (or 2 medium onions)
4 tomatoes (I used medium roma tomatoes)
4-5 green chillies
4 cloves garlic
1 tbsp ginger
3 tbsp oil
- SPICES
Salt to taste (~3-4 pinches)
Black pepper
1/2 tsp turmeric
1 tsp chilli powder
1 tsp coriander powder
1 tsp cumin powder
2 tsp garam masala
Directions
- Dice up your 1 large red onion, 4 tomatoes and 4-5 green chillies ( finely dice green chillies)
- Mince your garlic and ginger.
- In a pan heat up your 3 tbsp oil and add your onions, let those cook for a couple minutes on medium heat until a bit soft.
- Add in your tomatoes, green chillies, garlic and ginger with a bit of water (~2-3 tbsp)
- Let that cook for a few minutes until tomatoes are soft.
- Add in your spices (Salt to taste (~3-4 pinches), Black pepper to taste (~1 tsp), 1/2 tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, 1 tsp cumin powder, 2 tsp garam masala) and mix it all up.
- Crack in 3 eggs and scramble them up. Keep cooking until you reach your desired scrambled egg consistency.
