This recipe comes together quickly, which is why it is the perfect weeknight dinner. Start by cutting 700 grams of boneless chicken thighs into bite-sized pieces. Toss them in a simple marinade with egg white, soy sauce, rice vinegar and cornstarch. The egg white helps the cornstarch stick and creates a light crispy coating even without deep frying. Let it rest for about 15 minutes while you prepare the dry coating and the sauce ingredients.

In a bowl combine cornstarch and panko crumbs. Once the chicken has absorbed the marinade, toss each piece lightly through the coating. You are not looking for a thick breading here, just a thin crispy layer. Spray your air fryer basket with avocado oil and place the chicken in a single layer so the air can circulate properly. Air fry at 380ยฐF for 14 minutes, flipping halfway and adding a light spray on top for extra crunch.

Directions

  • Marinate chicken
  • Mix chicken, egg white, soy sauce, vinegar and 1 tbsp cornstarch. Rest 15 minutes.
  • Coat
  • Combine cornstarch and panko. Toss chicken until lightly coated.
  • Air fry
  • Spray basket lightly. Arrange chicken pieces in one layer. Air fry at 380 F for 14 minutes, flip halfway. Spray lightly again on top.
  • Sauce
  • Mix soy sauce, vinegar, hoisin, honey, brown sugar, garlic. ginger, water and 2 tsp cornstarch. Add the sauce to a pan and let it thicken up on medium heat.
