Beijing Beef : Takeout Series Ep 8 (Panda Express)

The all time classic Beijing beef is one of my favorite dishes to make. It is easy and tastes amazing. This dish has been popularized by takeout spots and this recipe is a copy of Panda Express.

Panda Express rates this dish as their second most sold dish and to be honest I completely understand why. It is sweet, tangy, sour, salty and pairs perfectly with rice of noodles.

For this dish I use tri tip steak but you can use any steak or piece of beef you want. Most times, flank steak is used. When cutting the steak, you always want to cut against the grain to make sure the slices are smaller and this makes the meat more tender. The amount of steak used is about 300g and serves 2. To the steak I add 1 egg as a binder, salt, soy sauce and rice flour (an easy substitute would be corn starch but I prefer rice flour).

The sauce is really simple and can be paired with any meat. All you need is rice vinegar, soy sauce, brown sugar, sweet chilli sauce, hoisin and garlic. I have made this sauce many times and have used it as a dip and coating protein like chicken or beef for extra flavour.

Ingredients

  • 300g flank steak or tri tipย 

  • 1 red bell pepper

  • 1 yellow onion

  • Marinade
  • 4 tbsp rice flour

  • 1.5 tbsp soy sauce

  • 1 egg

  • pinch of salt

  • Sauce
  • 1.5 tbsp rice vinegar

  • 1.5 tbsp soy sauce

  • 2 tbsp hoisinย 

  • 1 tbsp sweet chilli sauce

  • 1 tbsp brown sugar

  • 2 cloves garlic

  • Corn Starch Slurry
  • 2 tsp corn starch

  • 3 tbsp water

Directions

  • Start by cutting steak into strips (against the grain)ย 
  • Then marinate your beef with the ingredients listed above for 1 hour (preferably)
  • Cut up your red bell pepper and onion and set aside
  • Heat oil in a pan and fry the beef for 2-3 minutes (or until golden brown) at 350 F.
  • In a bowl mix your sauce ingredients and make the cornstarch slurry by mixing corn starch and water in a small bowl as well.
  • Heat a tbsp of oil in a pan and add your veggies, let them cook for a couple minutes until softish, then go in with your sauce and corn starch slurry. Let the sauce thicken up (will take a couple minutes), add in your fried beef and mix.
