
Another Panda Classic:
Embarking on a personal journey with Panda Express’s Sweet Fire Chicken has been nothing short of a love for me! The sweet and spicy sauce mixed with pineapples, red bell peppers and onions is AMAZING!
If you love this dish, give it a try at home because it is super easy to make and the taste is spot on. You can air fry the chicken but frying will give you the best results.

I start by cutting up my veggies into bite size pieces. I used pineapple, yellow onions and red bell peppers. Pineapples can be used from a can but fresh will always hit more!
The sauce is super simple, go to any grocery store and but sweet chilli sauce. I use VH but any works.
The chicken is also very simple, and this method of chicken can be used for most Asian takeout chicken dishes. The coating will be the same, usually the sauce changes.

Sweet Fire Chicken

1 large chicken breast (~200 g)
1 egg
1/2 cup AP flour
3 tbsp corn starch
1/2 tsp salt
black pepper (few cranks) (optional)
1/2 cup sweet chilli sauce (I used VH company)
1 cup diced pineapple
1 medium white/yellow onion
1 red bell pepper
green onions (optional)
Directions
- Start by dicing your chicken into bite size pieces.
- In a dish crack and egg and whisk (this will be our binder for frying).
- In another dish mix together the flour, corn starch salt and black pepper.
- Now coat your chicken in the egg wash then the flour mix.
- In a pan heat up neutral oil (I used vegetable oil) to 350 F and fry your chicken in batches for 3-4 minutes (do not overcrowd the pan because this will decrease the temperature of the oil).
- Chop up 1 red bell pepper, 1 cup of pineapple chunks and 1 white/yellow onion. Cut the onion into petals to get it exactly like takeout.
- In another pan heat up 1 tbsp oil and add in 3 cloves of garlic (minced) and cook until fragrant (~30 seconds) on medium heat, then add in your vegetables and pineapples. Cook until they are semi soft (~3-4 minutes).
- Throw in your cooked chicken and sweet chilli sauce.
- Mix and garnish with green onions and serve on its own or with noodles or rice.
- Now its time to ENJOY!
