If you’re craving a quick and flavorful pasta dish that doesnโ€™t require a long list of ingredients, look no further than Aglio e Olio! Itโ€™s a classic Italian pasta recipe that highlights the beauty of garlic, olive oil, and a few simple extras. Today, Iโ€™m walking you through how to make it step by step, and trust meโ€”itโ€™s so easy, youโ€™ll want to make it every week.

Step One: Boil That Water!

First things first: get that water boiling! Fill a large pot with water and set it on the stove. Youโ€™ll want to get the water boiling early so that your pasta will be ready when everything else is. Pro tip: donโ€™t forget to salt the water generously! Two big tablespoons of salt will do the trickโ€”it should taste like the ocean. Once the water is boiling, toss in your spaghetti and cook it according to the package instructions, usually around 10 to 12 minutes.

Step Two: Prep the Flavor Bombs

While your pasta is cooking, letโ€™s prep the stars of the showโ€”garlic and parsley! Start by finely slicing a few garlic cloves. The thinner, the better! This ensures the garlic will cook quickly and release all its delicious flavor into the oil. Set that garlic aside, and then chop up some fresh parsley. Ingredients

  • 2 servings of spaghetti

  • Garlic cloves – 5-6

  • Chilli oil – 1 tbsp

  • Olive oil – 4 tbsp

  • Chilli flakes – 1.5 tbsp (add more if you want it spicy)

  • Pasta water – 1/2 cup

  • Parsley – 1/4 cup chopped

  • Parmesan – 2-3 tbsp (shredded)

Directions

  • First, start by putting water to boil for your pasta.
  • Start by finely slicing the garlic cloves and set it aside.
  • Next finely chop up the parsley and also set it aside.
  • Once the water is boiling, add in a bunch of salt (2 big tbsp) and add in the spaghetti. Cook according to the package. Usually around 10-12 minutes.
  • In a separate pan, heat up 4 tbsp olive oil and 1 tbsp chilli oil on medium heat and add the garlic in. Let that cook for 2 minutes until garlic is fragrant (keep heat low at this point so the garlic does not burn).
  • Add in 1.5 tbsp chilli flakes and once pasta is done, make sure to save 1/2 cup of pasta water. Add in the pasta and pasta water and mix it up.
  • Finish is off with the chopped parsley (1/4 cup) and grated parmesan (2-3 tbsp).
  • Mix it up and NOW ITS TIME TO ENJOY!
