First, grab a large carrot and peel it before slicing it into delightful coin shapes. These little rounds will bring a sweet crunch to your dish. Next, chop up some bell peppers into square chunks. Use a mix of colors—red, yellow, and green—to create a dish that’s as beautiful as it is tasty.

Now, heat oil in a wok and toss in your prepped carrots and bell peppers. Let them cook for 2–3 minutes until they’re just tender but still have a little crunch. Then, add ketchup, vinegar, rice vinegar, sugar, MSG (optional but adds a savory punch), and water to the wok. For a perfectly thickened sauce, mix 2 tablespoons of corn starch with 3 tablespoons of water to create a slurry, and stir it in.

Chicken breast – 400g (3 pieces)
Carrot – 1 large
Bell peppers – 2 (any colour)
Green onions – Garnish (optional)
- CHICKEN MARINADE
Soy sauce – 1 tbsp
Mirin – 1 tbsp
Corn starch – 2 tbsp
All purpose flour – 3 tbsp
Water
- SAUCE
Ketchup – 4 tbsp
Vinegar – 3 tbsp
Rice vinegar – 1 tbsp
Sugar – 1 tbsp
water – 1/2 cup
MSG – 1 tsp (optional)
- CORN STARCH SLURRY
Corn starch – 2 tbsp
Water – 3 tbsp
Directions
- Start by peeling and slicing up 1 large carrot into coins. Then cut up bell peppers into square chunks.
- To prepare the chicken, slice up 3 chicken breast into bite size cubes.
- For the marinade, add 2 tbsp soy sauce, 1 tbsp mirin, 2 tbsp corn starch, 3 tbsp all purpose flour and 1/3 cup water. Mix it up until you have a loose batter (add more water as needed).
- Next, heat up oil in a frying pot and bring it up to 350 degrees C. Fry the chicken for 3 minutes or until golden brown. Remove it and set it aside. Fry the chicken in batches to not overcrowd the oil, otherwise the temperature of the oil will drop.
- For the sauce, add oil in a wok and let that heat up before adding in the sliced carrots and bell peppers. Lets the cook for 2-3 minutes, until semi soft.
- Add in ketchup, vinegar, rice vinegar, sugar, MSG and water.
- Make a corn starch slurry with 2 tbsp corn starch and 3 tbsp water and add it into the wok.
- Let the sauce thicken up and add in the chicken, mix it up and NOW ITS TIME TO ENJOY!
