Thai Peanut Noodles

2-3 packs of any ramen noodles you like
OR
3 packs of udon
2 tbsp oil
4-5 cloves of garlic
2 tbsp red thai curry paste
2 tbsp peanut butter
1 can of coconut milk
1 litre of chicken stock
- GARNISH
1 soft boiled egg
A handful of chopped green onions
1 tsp of chilli oil
Directions
- Prepare the broth: Start by heating up oil in a pan then adding in chopped garlic and let that get fragrant (~30-60s). Then add in 2 tbsp of red Thai curry paste and cook for 1-2 minutes, follow that up with 2 tbsp of peanut butter and 1 can of coconut milk. Mix everything together and lastly finish it off with 1 litre of chicken stock. Add salt and pepper to taste.
- Once boiling add in your choice of noodles and cook according to the instructions on the package. If it ramen it should be 4-5 minutes and if its udon it should 2-3 minutes.
- After the noodles have cooked, take it out into a bowl, add a soft boiled egg on top, chopped green onions and chilli oil.
