Smashed Potato Salad

What is a Potato Salad?

Potato salad is a classic and versatile dish made primarily from boiled potatoes and dressed with various ingredients to create a flavorful, creamy, or tangy side dish. It is a staple at picnics, barbecues, potlucks, and holiday gatherings, loved for its comforting texture and ability to pair with a wide variety of main dishes.

Originating in Europe, potato salad has evolved over time and now has countless variations worldwide, each featuring unique ingredients and dressings to suit regional tastes.

Key Components of a Potato Salad:

Potatoes:

  • Typically, waxy varieties like red potatoes or Yukon Gold are used because they hold their shape well after boiling.
  • Potatoes are usually boiled until tender and then either diced, sliced, or smashed.

Dressing:

  • The dressing can vary, but the most common bases include:
    • Mayonnaise: For a rich and creamy texture.
    • Yogurt or Sour Cream: Adds a tangy, lighter note.
    • Mustard: Provides a zesty flavor.
    • Vinegar or Lemon Juice: Brightens the dish and balances richness.
  • A combination of these ingredients is often used for depth of flavor.

Vegetables and Add-ins:

  • Common additions include celery, green onions, red onions, pickles, or bell peppers for crunch and flavor.
  • Fresh herbs like parsley, dill, or chives can enhance the taste and add a fresh, vibrant note.

Seasonings:

  • Salt and pepper are essentials, with paprika, garlic powder, or even a pinch of sugar occasionally added for complexity.

Proteins (Optional):

  • Hard-boiled eggs, bacon bits, or diced ham are popular protein-packed add-ons.

Lets Make it: Smashed Potato Salad!

A New Twist on Comfort Food: Smashed Potato Salad

If you’re looking for a dish that’s crispy, creamy, and downright irresistible, this smashed potato salad is here to steal the show! It’s a modern take on a classic comfort food, combining golden, crispy potatoes with a tangy and creamy dressing. Whether you’re hosting a barbecue or enjoying a cozy dinner at home, this recipe will have everyone asking for seconds.

    Boil ‘Em Up!

The first step to potato perfection is boiling them to tender softness. Start by adding your potatoes to a pot of salted boiling water. Let them cook for about 15 minutes, or until a fork pierces through easily. The salted water not only seasons the potatoes but also helps them cook evenly. While the potatoes are doing their thing, it’s time to get the rest of the dish ready.

    The Creamy, Dreamy Dressing

As the potatoes boil, chop up your favorite veggies for some added crunch and color. Classic options include celery, green onions, and maybe some fresh parsley. Toss them into a bowl, then whip up the dressing right in the same bowl: 2 cups of tangy Greek yogurt, 1 cup of rich mayo, 1 tablespoon of zesty mustard, and the juice from half a lemon. Mix it all together until it’s creamy and well-combined, then set it aside to let the flavors meld.

    Crispy Potatoes, Meet Your Match

Once the potatoes are done boiling, the real fun begins! Smash each potato gently with a round surface to flatten them slightly—you want them to hold their shape but still have those lovely edges that’ll crisp up beautifully. Brush the smashed potatoes with a bit of oil and air fry them at 400°F for 20 minutes, flipping them halfway through to ensure even crispiness. The result? Golden, crunchy bites that are delicious on their own but even better when tossed in the creamy dressing.

    Toss, Serve, and Savor

When the potatoes come out of the air fryer, let them cool slightly before mixing them into the bowl of dressing. The warm potatoes soak up the flavors, creating a salad that’s creamy, tangy, and full of texture. Serve it up as a side dish, or make it the star of the show—either way, this smashed potato salad is guaranteed to be a hit. So grab a fork, dig in, and enjoy every crispy, creamy bite!
