What is Hyderabadi Paneer Masala?
Hydrabadi Paneer Masalaย is a rich and flavorful curry dish inspired by the culinary traditions of Hyderabad, India. It combines the creamy texture of paneer (Indian cottage cheese) with a robust, aromatic gravy made from a blend of spices, herbs, and other ingredients. The dish is known for its perfect balance of heat, tanginess, and creaminess, making it a popular choice in Indian cuisine!
Key Components of a Hyderabadi Panner Masala Curry:
- Paneer: The star ingredient, paneer, is cubed and fried until golden brown, giving it a slightly crispy exterior while keeping it soft inside.
- Onion-Ginger-Garlic Base: A paste made from sautรฉed onions, ginger, garlic, and green chilies forms the foundation of the gravy, providing depth and flavor.
- Spices: A mix of whole spices (like bay leaf, cinnamon, black and green cardamom, cumin seeds and cloves) and ground spices (such as turmeric, red chili powder, coriander powder, cumin, and garam masala) adds warmth and complexity to the dish.
- Herbs: Fresh mint, spinach and cilantro leaves along with the Onion-Ginger-Garlic base are blended into the gravy, giving it a refreshing and aromatic touch.
- Yogurt (Dahi): Yogurt is used to add a slight tanginess and creaminess to the gravy, balancing the spices.
- Cream: Heavy cream is added at the end to enrich the curry, making it smooth and luxurious.
- Kasuri Methi: Dried fenugreek leaves (kasuri methi) are crushed and added for a distinct, earthy flavor that enhances the overall taste.
- Oil/Ghee: Used for frying and cooking, oil or ghee adds richness and helps blend the flavors together.
- Garnishes: The dish is often garnished with finely chopped cilantro leaves, a drizzle of cream, or chili oil for added flavor and visual appeal.
Hyderabadi Paneer Masala is typically served with roti, naan, or rice, making it a hearty and satisfying meal. Its unique blend of spices and creamy texture sets it apart from other paneer dishes.
Lets Make it: Hyderabadi Paneer Masala Curry!
How to Make Hyderabadi Paneer Masala:
If youโre craving a dish thatโs rich, creamy, and packed with bold flavors, Hyderabadi Paneer Masala is here to save the day! This recipe is a delightful blend of spices, herbs, and golden-fried paneer cubes swimming in a luscious gravy. Whether youโre a seasoned cook or a newbie in the kitchen, this step-by-step guide will make you feel like a culinary pro. Letโs dive in!
Step 1: Fry the Paneer โ Golden Goodness!
First things first, letโs get that paneer ready! Heat up 1/4 cup of oil in a pan and toss in the paneer cubes. Fry them until they turn golden brown on all sidesโthis gives them a slightly crispy exterior while keeping them soft and juicy inside. Once theyโre perfectly golden, remove them from the oil, let them drain, and set them aside. Pro tip: Donโt snack on all the paneer cubes before they make it into the gravy (I know itโs tempting!).

Step 2: Prepare the Onion Mixture โ The Flavor Base
Now, letโs build the foundation of our gravy. In the same pan (because why waste all that flavor-packed oil?), add more oil if needed and toss in chunks of onions, ginger, garlic, and green chilies. Fry them on medium heat for 3-4 minutes until the onions get a little charred and aromatic. Once done, let the mixture cool down to room temperature. Then, blend it with fresh mint leaves, cilantro (stems and all!), yogurt, spinach leaves, and a splash of water. The result? A vibrant, greenish paste thatโs bursting with flavor. Set this asideโitโs the secret weapon of our gravy!

Step 3: Cook the Whole Spices โ Aromatic Magic
Time to awaken those spices! In the same pan, add 2 tablespoons of oil and toss in whole spices like bay leaf, cinnamon, black cardamom, green cardamom, cumin seeds, and cloves. Let them sizzle for about 30 seconds until they release their heavenly aroma. Be careful not to burn themโno one likes bitter spices! This step is like setting the stage for the flavor explosion thatโs about to happen.

Step 4: Cook the Masala Paste โ Slow and Steady Wins the Race
Now, add that gorgeous blended paste to the pan with the whole spices. Cook it on medium-low heat for about 15 minutes, stirring occasionally. Cover the pan with a lid to avoid splatters, but donโt forget to peek in and give it a stir now and then. Youโll know itโs ready when the masala thickens and the oil starts to separate from the sides. This slow cooking process is what makes the gravy rich and deeply flavorful.

Step 5: Add Spice Powders and Oil โ The Flavor Boost
Once the masala is cooked, itโs time to amp up the flavor! Add turmeric, red chili powder, coriander powder, cumin powder, and garam masala. Fry the spices for 2-3 minutes to let them bloom. Season with salt to taste (add a little at a time and taste as you go). This step is where the magic really happens, so take a moment to enjoy the incredible aroma filling your kitchen.

Step 6: Simmer the Paneer and Finish with Cream โ The Grand Finale
Pour in 1 cup of hot water to create a smooth, luxurious gravy. Add the fried paneer cubes and let them simmer in the gravy for 5 minutes on low heat. This allows the paneer to soak up all those amazing flavors. Finally, turn off the heat and stir in fresh cream, chopped cilantro, and crushed kasoori methi (dried fenugreek leaves). Garnish with a drizzle of heavy cream, finely chopped cilantro, and a 1-2 tbsp of chili oil for that extra kick. And just like thatโyour Hyderabadi Paneer Masala is ready to devour!

Time to Dig In!
Serve this creamy, dreamy paneer masala hot with roti, naan, or steamed rice. Every bite is a perfect balance of spice, creaminess, and that irresistible paneer texture. So, grab a plate and enjoy this flavorful curry. Trust me, this dish is going to be a repeat star in your kitchen!
