Chicken Adobo / Adobo Chicken

Chicken adobo is a dish you will instantly fall in love with. It is a Pilipino dish which slow cooks the chicken until its fall off the bone and extremely tender.

The marinade is really simple and can be done ahead of time so the chicken has time to soak up the goodness.

Although this is a long cooking time, it is worth every minute. Slow cooked chicken is always so tender and juicy.

Ingredients

  • 5 chicken legs

  • 1/2 cup soy sauce

  • 3/4 cup rice vinegar

  • 10 cloves garlic

  • 3 bay leaves

  • 1 tbsp whole black peppercorns

  • Few cranks of black pepper

  • 3 tbsp brown sugar (or palm sugar)

  • 3/4 cup water

Directions

  • Marinate chicken by mixing all the above ingredients in a bowl for 1 hour (preferably 24 hours).
  • Heat oil in a pan and brown chicken on both sides (2-3 minutes on each side).
  • Take out chicken and add marinade to the same pan and bring to a boil.
  • Add chicken back in and cover and simmer on low heat for 25 minutes, flip and cover and simmer again for another 25 minutes until chicken falls of the bone and sauce is thicc!!
