Smash Burgers with a twist (Masala Smash burgers )

Smash burgers are an American classic and to be honest, one of the best style of burgers. The patty is thin and crispy and the veggies add a nice crisp with a soft brioche bun. Today, we are making masala smash burgers. These are a fusion between Indian spices and American food and it turned out absolutely amazing!

Indian kachumber is a type of salad or relish made with finely chopped onions, tomatoes, cucumbers, and sometimes with added ingredients such as fresh herbs, lemon juice, and spices like cumin, chilli powder, and chat masala. It is often served as a refreshing side dish but today we are adding it to our smash burgers in the form of a fresh slaw.

Once the patty is thin and crispy I like to add a slice of American cheese and cover it to let it melt which only takes about 20-30 seconds. Now if you are like me, I always do a double patty especially if its a smash burger. Once the patty is done, assembling is the fun part. I like to add sauce on both buns and add the kachumber as our slaw.

Ingredients

  • 4 Brioche Buns

  • Sauce
  • 1/4 cup mayo

  • 1/2 tsp garam masala

  • pinch of salt

  • Slaw (Kachumber)
  • 1/2 cup diced cucumbers

  • 1/2 cup diced tomatoes

  • 1/2 cup diced onions

  • 1/2 tsp chat masala

  • 1 tbsp lemon juice

  • salt to taste (start by adding a couple pinches)

  • Beef Patties
  • 12 oz ground beef (80/20 medium lean)

  • 1/2 tsp kashmiri red chilli powder

  • 1/4 tsp turmeric

  • 1/2 tsp corainder powder

  • 1/2 tsp cumin

  • big pinch of salt per 3 oz beef ball (salt once in the pan)

Directions

  • Chop up veggies for the slaw and add it to a bowl with chat masala, lemon juice and sale. Mix it up and set aside.
  • Mix the spices listed under beef patties to the ground beef and make 4 3oz beef balls and set aside. (I like to use a food scale but you can just eyeball this as well)
  • Toast up your brioche buns on low heat with some butter until nice and golden brown.
  • For the sauce mix mayo, garam masala and salt.
  • Add your beef ball to a pan (preferably cast iron) on full heat, add a big pinch of salt.
  • Place a parchment paper on top and smash your beef balls into thin patties and try to get it really thin so the edges crisp up nice.
  • Cook for 1 minutes on both sides and add a slice of cheese and cover until chees melts (~20-30 seconds) and now its time to assemble your burgers.
